Is there any way in Java to read in data, and then send export that data into other documents (such as a word document, EXCEL spreadsheet, etc.).

If you want to programmatically interact with Microsoft proprietary file formats, use Microsoft programming technology like the .net platform and the c# language. If you're already good with Java, c# is good to use. If you are stronger with another language, pick the .net language that is most similar to that because they are all just as good at solving your problem.
